Pork and Sage Dumpling Stew w/ Potatoes

"The easiest and juiciest dumplings made with pork mince (chicken mince is great too if you don't eat pork) and the secret ingredient that saves tons of time - sage stuffing! Simply mix together to make light and tasty dumplings for a hearty warming dinner that can be on the table in 20 minutes!! "

INGREDIENTS
SWAP SHOP
2 cloves garlic, chopped

1 small onion, chopped
-
2 carrots, chopped into 2cm pieces
2 parsnips, chopped into 2cm pieces
250g potatoes, chopped into 2 cm pieces
250g swede, chopped into 2 cm pieces
200g minced pork
200g minced chicken
85g sage stuffing mix

1 chicken stock cube
1 veg stock cube
1 handful spinach
1 handful green leaves (or peas)

METHOD
  1. Take a bowl and pour 200ml boiling water over the sage stuffing. Mix well and leave for a minute. Add the pork mince and stir until the pork is thoroughly combined. Wet your hands and form into 8 golf-ball sized dumplings. Make sure to firmly press the mixture together.
  2. Wash and prep the vegetables. Cut the carrot and potatoes into equal sized 2 cm pieces (skin on if you like), and dice the onion and garlic. Add to a large pot with 750ml boiling water and a stock cube.
  3. Bring to the boil then gently add the dumplings so they are submerged. Lower the heat to a gentle simmer and place a lid on the pot. Simmer for 15 minutes then add a handful spinach until wilted.
  4. Season well with black pepper and a pinch of salt. Serve hot.

NOTES
Swap the minced pork and sage for a couple fat juicy sausages, each cut into 3 pieces.
