Black Eyed Beans
Can be swapped for most canned beans inc. Cannellini Beans, Butter Beans, Kidney Beans, Haricot Beans, Borlotti Beans, and Chickpeas. All of the above can be swapped for dried versions if you soak and prepare them according to the packet instructions.
Can be swapped for Raspberries, and other soft fruits. If swapping for 'red or black' currents you may need to add honey or sugar to balance the sourness.
Can be swapped for Savoy Cabbage, Green Cabbage, Kale, Chard, Brussel Sprouts, Courgette, Cauliflower.
If used as a spread, can be swapped for Olive Oil, Margarine, Lard, Schmaltz. If used in cooking, Butter can be swapped for Vegetable Oil, Olive Oil, Coconut Oil, Cooking Oil, Animals Fats.

If cooked in the oven Butternut Squash can be swapped for Sweet Potato, Pumpkin. Carrot, Potato, Parsnips, If cooked in a soup Butternut Squash can be swapped for Sweet Potato, Pumpkin, a 50:50 mixture of Carrot and Potato, or Red Lentils.
Red, White and Green Cabbages are swappable inc. Savoy Cabbage, Green Cabbage, White Cabbage, Red Cabbage, and Shredded Brussel Sprouts. Milder cabbages such as Chinese Cabbage, Bok Choy, Pak Choy and Napa Cabbage are also swappable. In Coleslaws, Cabbage can be swapped for grated Kohlrabi, Celery, Carrot, Fennel, and Broccoli Stems.
Can be swapped for Olives, Chopped Gherkin, Pickled Garlic.
In stir-fries, Carrots can be swapped for very thin Sweet Potato strips, courgette strips, Pepper Strips, and strips of the Broccoli Stem. If cooked in the oven, Carrot can be swapped for most root vegetables inc. Parsnips, Sweet Potato, Potato, Pumpkin, Butternut Squash, Celeriac, Turnips, Kohlrabi, Beetroot.
Can be swapped for other semi-hard cheeses such as Red Leicester or Cheshire Cheese, Gloucester, Colby, and even Gruyere, In sauces, Parmesan, Grana Padano and Feta Cheese work well and give a stronger flavour.
Chicken Stock Cube
Can be swapped for Vegetable Stock Cubes
Can be swapped for most canned beans inc. Cannellini Beans, Black Eyed Beans, Kidney Beans, Haricot Beans, Borlotti Beans, and Butter Beans. All of the above can be swapped for dried versions if you soak and prepare them according to the packet instructions.
Most chillies are swappable, just remember that the strength of heat will vary between them and they will give a slightly different flavour profile. Fresh Chillies can be swapped for Chilli Powder, Chilli Flakes, Cayenne Powder, Paprika and most hot sauces such as Tabasco and Sriracha.
Can be swapped for other meats such as Bacon, Sausages (both dry-cured & fresh), Salami, and even Saucisson. If you want to replicate the spicy Chorizo flavours you can add Paprika, Smoked Paprika or a pinch of chilli flakes. Vegetarians can swap Chorizo for Sundried Tomatoes, Olives, or Halloumi Cheese.
Can be swapped for Allspice, Nutmeg.
Can be swapped for any Milk, Cream, Nut-based Milks, and even Yoghurt. If using Milk you can create a thicker consistency by adding a tbsp. flour or cornstarch. Creamed Coconut can be mixed with water or milk to create a good substitute.
In salads, Fresh Coriander can be swapped for other fresh herbs such as Parsley or Mint, In soups and stews, Fresh Coriander can be swapped for Fresh Parsley. If the recipe calls for Ground Coriander, this an be swapped with Coriander Seeds or even ground cumin - although this will give a different flavour profile, it will still taste delicious.
Can be swapped for Cream Cheese, Quark, Ricotta Cheese, Yoghurt, Bechamel Sauce, Mozzarella Cheese.
Can be swapped for a variety of vegetables, just note that the cooking times may be longer for harder veg such as carrots. Aubergine makes a good swap for courgette as do Peppers, thinly sliced Butternut Squash, Savoy Cabbage, Green Beans, Leeks, Spinach, Broccoli, Marrow.
Can be swapped for Quinoa, Bulgar, Rice, Orzo. If you wanted to use a vegetable, Cauliflower can be blended until a grain-like consistency and then heated through in a pan with some butter or olive oil, salt, pepper, and even spices.
Can be swapped for Sour Cream, Yoghurt (especially Greek Yoghurt), Cream Cheese, Heavy Cream.
Can be swapped for Courgette, Marrow, Radish, Tomato,
In stir-fries Egg can be swapped for Tofu.
Can be swapped for Halloumi, Cottage Cheese, Goats Cheese, and even Tofu. In soups, grated Feta Cheese can be swapped for Creme Fraiche, Sour Cream or Lemon Juice.
Is made from a blend of Star Anise, Cloves, Cinnamon, Sichuan pepper, and Fennel Seeds. Just adding Cinnamon and Star Anise will give a good flavour profile, as will adding a little Ground Ginger.
The ingredients of Garam Masala vary according to region of India but is typically made from a mix of ground Peppercorns, Cloves, Cinnamon, Nutmeg, Cardamom, Bay Leaf, and Cumin. Others include Ginger, Chilli, and Coriander. Just adding 1/2 tsp. equal amounts of several of these spices will bring layers of beautiful flavour to your recipes.
Can be swapped for Garlic Powder, Wild Garlic, Spring Onion, Chives, Red or White Onion, Shallots, Finely Diced Celery, Ginger.
Can be swapped for Ground Ginger, Galangal, White Pepper, Black Pepper, Lemon.
Can be swapped for any soft and creamy cheese inc. Feta Cheese, Cream Cheese, Cottage Cheese, Ricotta Cheese, Marscapone, Mozzarella, and even Greek Yoghurt. If cooking in a the oven the best choice is Feta Cheese.
Can be swapped for Runner Beans, French Beans, Broad Beans, Edamame, Snap Peas, and Peas, In Stir-fries and vegetable dishes the Green Bean can be swapped for most veg inc. Courgette, Broccoli, Carrot, Peas, and Green Peppers,
An alternative to Avocado Guacamole can be made by pureeing a cooked Broccoli with 2 tbsp. Cream Cheese, 1 Spring Onion, 1/2 a clove Garlic, 1/2 tbsp. Lemon Juice, 1/2 tbsp. Olive Oil, a pinch of Salt, Pepper and Chilli Flakes.
Can be swapped with any other meats slices such as Chicken, Beef, Lamb, and Turkey. Other good swaps are Salami, Chorizo, Saucisson, Prosciutto, and Bacon. Vegetarian swaps inc. Sundried Tomato, Olives, and spreads such as Hummus, Baba Ganoush, and Tzatziki.
Can be swapped for Maple Syrup, Sugar mixed with a little water, Molasses, Rice Syrup, Corn Syrup, Date Paste.
Can be swapped for Greek Yoghurt, (or any Yoghurt), drizzled with Honey. Take this a step further by adding frozen berries and Granola Cereal for an indulgent dessert. Coconut Milk can also be mixed with a sweetener such as Honey and semi-frozen to make an Ice Cream Swap. Frozen Grapes also make a quick and simple dessert snack.
Can be swapped for most green and leafy vegetables. Good swaps inc. Broccoli, Spinach, Watercress, Savoy Cabbage, Chard, Radish Leaves, Beetroot Leaves, and Courgette.
Can be swapped for Tomato Puree mixed with a dash of Vinegar, Sugar and Salt.

Can be swapped with Spring Onions, Garlic, White Onions, Shallots, or a mixture of any of the four.
Can be swapped for Lime in recipes where only a small amount of citrus is required. The Zest of a Lime can also be used in recipes that require Lemon Zest.
Can be swapped for Lime Juice and even Orange Juice in salad dressings.
Can be swapped for Lemon or Lime zest. Use a 1/4 finely chopped Zest per Lemongrass, or 1/2 a peeled zest which can be removed at the end of cooking.
All lentil varieties can be swapped for each other but the Green Puy Lentil will retain some shape whilst the others tend to breakdown when cooked. Other swaps inc. Mung Beans, Chickpeas, Split Peas, and other Beans such as Kidney Beans, Borlotti Beans. and Black Eyed Beans.
All types of fresh lettuces and leaves can be swapped inc. Iceberg, Romain, Cos, Spinach, Watercress, Rocket, and any other edible leaf.
Can be swapped for Lemon in recipes where only a small amount of citrus is required. The Zest of a Lemon can also be used in recipes that require Lime Zest.
Can be swapped for Lemon Juice and even Orange Juice in salad dressings.
Can be swapped for Mashed Sweet Potato, Mashed Celeriac, Mashed Butternut Squash, and Mashed Parsnips. If you don't have enough Potato, you can add in Carrots or any of the above ingredients and mash together. An alternative Mashed Cauliflower can be made by cooking it until very tender, then adding a tbsp. butter, a good pinch Salt & Pepper and mashing as usual.
Can be swapped for Cream Cheese, Ricotta, Quark, Yoghurt, Hummus, Tzatziki, Raita, Pesto, Olive Tapenade, Guacamole, Avocado, Baba Ganoush.
Smimmed, Semi-skimmed, Full Fat, Goats, and Sheep Milk are all swappable. There are also alternatives available inc. Soy Milk, Oat Milk and Rice Milk which can be used in baking, as well as Almond, Cashew and other Nut based Milks.
Minced Beef & Pork
Can be swapped for Parsley, Basil, Marjoram, Oregano. In salads, Coriander can also replace Mint.
Is usually made from a mixture of dried Thyme, Oregano, Basil, Marjoram, Parsley and Sage. If you don't have Mixed Herbs simply use any of the above herbs as a replacement. Adding in one or more will create a similar affect to Mixed Herbs.
Can be swapped for Aubergine, Courgette, Peppers, and Tofu. Can also be swapped with any other veg of your choice if part of tray bake, stew, or vegetable medley.
Wholegrain can be swapped for smooth mustard. Other substitutes inc. Wasabi, Horseradish, and Mayonnaise mixed with Sriracha or hot sauces.
Rice Noodles, Egg Noodles, Wheat Noodles, Buckwheat Noodles can all be swapped. It's possible to swap Noodles for Spaghetti, Rice, and pasta such as Orzo.
Most nuts can be swapped in recipes. For example Basil Pesto can be made with Pine Nuts, Walnuts, Almonds, Cashews etc. You can also swap nuts for Seeds such as Pumpkin Seeds, Sunflower Seeds, and Sesame Seeds etc. Peanuts are a good all-round cheap and tasty nut to keep stocked in your cupboard and go well in stir-fries, curries, and satay sauces.
Can be swapped for Mace, Garam Masala, Cinnamon.
In cooking, Olive Oil can be swapped for other fats such as Vegetable Oil, Rapeseed Oil, Sunflower Oil, Coconut Oil, Peanut Oil, Butter, Ghee, and Animal Fats. In salad dressings, swap Olive Oil for Vegetable Oil, Sunflower Oil or even Sesame Oil.
Can be swapped for Capers, Sundried Tomatoes, Artichokes, and other marinated deli-style vegetables. Meats such as Salami, Chorizo, Bacon, and Prosciutto can also make a good swap if you're looking for that salty flavour profile.
Can be swapped for Red or White, Shallots, Spring Onion, Leek, Garlic, Celery.
Can be swapped for any strong hard cheese such as Pecorino Romano, Grana Padano, or even Mature Cheddar. You can make a delicious Parmesan alternative by lightly frying 1/2 cup bread crumbs, with 2 tsp.mixed herbs, a good pinch salt & pepper, and a tbsp. olive oil.
Can be swapped for chopped or whole tinned tomatoes, (either 'as is' or blended in a food processor).
Most varieties of Pasta and Spaghetti can be swapped. If you don't have Spaghetti or Pasta but need to put your sauce on something, then Rice, Polenta, Potato, Mashed Potato, Blended (then cooked) Cauliflower, and Couscous will make a decent substitute.
Can be swapped for Nectarines, Pears, Apples, and other soft fruits such as Apricots and Plums,
Can be swapped for Pine Nuts, Cashew Nuts, Almonds, and Seeds such as Sesame Seeds, Pumpkin Seeds, and Sunflower Seeds.
Can be swapped for Sweetcorn, Sugar-snap Peas, Mange Tout, Diced Courgette, Diced Carrot, and other diced vegetables such as Broccoli Stem, Celeriac, and Green Beans
All coloured Peppers can be swapped. In salads, you can replace Peppers with Tomato, Cucumber, Carrot and Radish. In cooked recipes you can swap Peppers for slices of Courgette, Green Beans, Carrot, Sweet Potato, Butternut Squash, and Tomatoes (remove the seeds).
Can be swapped for Mashed Potato, Sweet Potato, Cauliflower, and Couscous, If you've looking for an alternative to shop bought blocks of Polenta, you can use Tofu, Bread, or even Gnocchi.
Most varieties of Potato can be swapped. You can roast, mash or boil baby potatoes, new potatoes, Baking Potatoes etc and they will still taste good. When roasting, they may not all have the perfect fluffy centre, but it's better to use what you have rather than buying new. Sweet Potato, Celeriac, Parsnip, Carrot, Turnip, Cauliflower, and Squash can all be baked, boiled or mashed like Potatoes.
Can be swapped for chopped Olives, or Lemon Zest. You can also make a quick substitute by pan-frying slices of lemon in a little Olive Oil and Salt for 3-4 minutes until soft. Simply chop when ready and use as preserved lemon.
Ras El Hanout
Is a mixture of spices from North Africa and varies by region. It typically contains Cardamom, Cumin, Clove, Cinnamon, Nutmeg, Ginger, Coriander, Peppercorns, Paprika, Chillies, and Turmeric, You can make your own spice mix from some of these ingredients or swap Ras El Hanout, Garam Masala or Tandoori Spice.
Can be swapped for Chicken, Beef or Vegetable Stock.
Most varieties of Brown, White, Basmati, Fragrant, and Wild Rice can be swapped. If you don't have Rice but need to put your sauce on something, then Spaghetti, Noodles, Polenta, Potato, Mashed Potato, Blended (then cooked) Cauliflower, and Couscous will make a good substitute. Paella Rice and Risotto Rice can also be swapped if necessary.

Most Seeds can be swapped in recipes. Seeds can also be swapped for Nuts. Peanuts and Mixed Seeds are good all-round cheap and tasty ingredients to keep stocked in your cupboard. They go especially well in stir-fries, curries, and satay sauces.
Can be swapped for Ground Peanuts, or lightly dry-fried Sesame Seeds. You can make an alternative seasoning called Gomashio which is ground dry-fried sesame seeds, crushed and blended with salt.
Can be swapped for Creme Fraiche, Yoghurt (especially Greek Yoghurt), Cream Cheese, Heavy Cream.
Can be swapped for Chicken, Vegetable and Beef Stock, Fish Sauce, and Miso Paste,

Can be swapped for Vanilla Bean Paste, Vanilla Pods, and Vanilla Extract.
In cooking, Vegetable Oil can be swapped for other fats such as Olive Oil, Rapeseed Oil, Sunflower Oil, Coconut Oil, Peanut Oil, Butter, Ghee, and Animal Fats. In salad dressings, swap Vegetable Oil for Olive Oil, Sunflower Oil or even Sesame Oil.
Can be swapped for Chicken Stock, or you can make a quick veg stock in 20 minutes: Chop an Onion and crush a couple cloves Garlic. Gently fry for 5 minutes in a pot with a tbsp Olive Oil, 2 Bay Leaves, a tsp Dried Herbs, a tsp Salt and a good pinch of Pepper. Add a carrot if available and pour in 1.5 cups boiling water. Simmer for a minimum of 15 minutes and then pour through a sieve. The longer you leave the stock to simmer the better it will taste.
There are many Vinegar varieties and people will tell you they cannot be swapped. The best bet is to try for yourself. In salad dressings, Red, White, Wine, Cider, and Balsamic Vinegar can all be swapped. Bear in mind that each vinegar has a different strength, sweetness and sourness profile. Add small amounts and adjust the flavour with the addition of salt and sugar (or honey) to create the correct balance for your dish. If you don't have Vinegar, use a squeeze of Lemon or Lime Juice.
Can be swapped for Chicken or Vegetable Stock.
Most varieties of Yoghurt can be swapped. Additionally, Yoghurt can be swapped for Sour Cream, Creme Fraiche, Ricotta, Cream Cheese, Heavy Cream.
