Caramelised Pineapple

"A perfect snack or pick me up for anytime of the day - especially breakfast! If you don't have honey, dissolve a tbsp sugar in a tbsp water, or use maple syrup if available. I think you'll love this one. "

Cook Time: 10 mins | Servings: 4 | Difficulty: easy

1 tbsp butter
1 pineapple, peeled, cored and cut into 8 long segments
4 peaches, halved and stone removed
1 tbsp honey
1 tbsp sugar dissolved in 1 tbsp water
pinch black pepper (optional)

  1. Remove and discard the pineapple skin, then cut the flesh into 8 finger-long wedges.
  2. Melt the butter in a non-stick griddle or frying pan over a medium-hot heat. Add the pineapple pieces and drizzle over the honey. Griddle each side for 2–3 minutes, until caramelized and golden.
  3. Remove the pineapple from the heat and very lightly season with black pepper.
  4. Slide each piece on a wooden skewer, if available.

½ tsp vanilla essence, 2 tbsp. Greek yoghurt.

The addition of a tiny pinch black pepper gives this a gorgeous warming flavour, but feel free to leave it out.
