Warm Mozzarella and Courgette Salad

INGREDIENTS
SWAP SHOP
125g mozzarella
125g soft goats cheese
1 large courgette

2 tsp olive oil + a drizzle
-
1 pinch salt and pepper

24g Salad Cress
1 tbsp chives, chopped

METHOD
  1. Trim the ends of the courgette and discard. Carefully cut the courgette into thin slices along the length, approx. ¼ cm thick.
  2. Cut a clove of garlic in half and rub the end inside a non-stick frying pan. Add a tsp olive oil and heat to medium hot.
  3. Place the courgette slices into the pan in a single layer and cook for 2-3 minutes until the underside begins to colour, then turn them over, add in a tsp olive oil and saute for another 2-3 minutes.
  4. Once cooked, arrange on a sharing plate with torn pieces of mozzarella. Drizzle with olive oil and season with salt and pepper.
  5. Use scissors to cut the green salad cress over the top, then serve warm.

ADDITIONS
toasted pine nuts, drizzle balsamic vinegar

NOTES
If your pan isn't big enough, you can grill the courgette on each side until it begins to change colour. Drizzle with olive oil before grilling.
